Continuing on the theme of sharing my favorite recipes while we ride out the pandemic…I’ve tried several #japchae recipes over the years and my family favors @maangchi ‘s recipe. There is quite a bit of prepping and slicing but maybe improving knife skills could be goal right now. Everyone is different but keeping busy is keeping me sane and distracted from dwelling on the situation. If ever there was a time to share favorite recipes!! I have been using this recipe (will link in comments) from my friend Marc at No Recipes for years. I #sousvide the #salmon instead of poaching but the key is that the #salsaverde would be good on almost anything. Here, I served it with #fiddleheadferns just coming into season but you choose. It’s versatile!

I no longer order octopus at restaurants because a dish usually consists of two tenticles which is not even close to enough for our family. At somewhere between $16 and $24 for the dish, it’s just not economical for me to order two or three plates of it. At home, I usually make whole octopus, around 4 pounds, and we sometimes finish it. ~Octopus salad with roasted eggplant, olives, and tomatoes

I’ve mentioned this trend in upscale Korean before ….and I’m totally buying! Kochi does a great job with their 9 course skewer-centric tasting menu ($75 but there are supplements you can add) where the food feels beautiful and fancy, artfully served, with knowledgeable and well trained staff. YET, the space is small and kinda cramped in that typical NYC way so it doesn’t feel stuffy and formal. It’s also currently still BYOB (no corkage fees). My two favorites (but really enjoyed everything) were the first and third dishes. Upper left corner, Pine nuts and potato milk soup, corn fritter. Upper right corner, Seared shrimp, sunchoke soubise, mugwort glaze (doesn’t say on menu but I think there’s shrimp paste on top of the shrimp which is divine). I’ve mentioned this trend in upscale Korean before ….and I’m totally buying!
