My Favorite Chocolate Chip Cookies

For as long as I’ve been baking, or cooking at all, I’ve been baking chocolate chip cookies. Isn’t it one of the first things kids learn to do in the kitchen? Warm chocolate chip cookies just minutes out of the oven have always been a favorite treat of mine. Even the simple original Nestle recipe on the back of a bag of chocolate chips hits the spot. That recipe got a lot of use in my college days and even when I moved on to using better chocolate and dark chocolate, I still used that basic recipe for years. Then I started trying tons of different chocolate chip cookie recipes, some fancy, some not, with and without nuts. I enjoyed them all, truly. Yet, I think I’ve found my favorite chocolate chip cookie recipe, as hard as that is to admit.

Bullseye Cookies

I couldn’t decide what to make for #NYCookieSwap 2011. It’s a big deal with cookie greats like Dorie Greenspan attending! Lon saved the day and came up with an idea I loved: a way to combine three classic cookies that everyone loves. What’s better than your favorite cookie? Three of your favorite cookies in one! It’s a Chocolate Chip Cookie in the center with a ring of Chocolate Cookie around it, with another ring of Peanut Butter Cookie around that.

Chocolate Peanut Butter Footballs

I’m gearing up for Superbowl, and in my world, that has nothing to do with the sport, the teams, or wherever it’s located. Where is the Superbowl? For me, it’s just another excuse to eat, cook, and be merry. Yup, I’ll be throwing you a couple of ideas for your party and I think a football shaped treat is just the way to start us off on the right foot.

Beet Chocolate Cupcakes

Remember when I was so so sad that I couldn’t eat the gorgeous Red Velvet Cake that Lon made (because I’m allergic to artificial food coloring)? Well, I still can’t eat Red Velvet Cake, but I’m still researching into a way to make it red without artificial food coloring. King Arthur is now selling some natural food coloring and one of them is red/pink, but the reviews warn that it’s only able to do pink, so it probably won’t be able to over-power the brown of the chocolate. There was some talk of beets, perhaps the original Red Velvet Cake (many different theories), but they seem to loose their color when cooked or mixed with baking powder or baking soda. So, no solution for making me a good Red Velvet Cake yet, but this beautiful Beet Cake at Straight From the Farm inspired me to make Beet Chocolate Cupcakes.

Having fallen head over heels in love with the chocolates from L.A. Burdick, we were dying to know more about Pastry and Chocolate Chef Michael Klug. Amidst the busy Mother’s Day crunch, he was still kind enough to share some great insights about himself and chocolate.

FoodMayhem (FM): You have worked at some fancy restaurants (Lespinasse and Chanterelle to name a few), some of the biggest names in the world.  What drove your decision to switch from big city Pastry Chef to chocolatier of a smaller company?

Chef Michael Klug (MK): Before I came to Burdick chocolate I was working my entire career in restaurant and hotel business establishments; and yes some of these where among the finest in the industry during this time. During my years at Lespinasse with Chef Gray Kunz we were always on the search on the best ingredients and products. In the summer of ’93 Kunz approached me if I would consider to actually purchase chocolates for our petit four assortments. Not that we didn’t like what we were making at Lespinasse, but Kunz thought a chocolate company had the better set up and efficiency to make a superior confection than a restaurant. And to his opinion L.A. Burdick was the highest standard of chocolate quality that he could find. After I tasted the chocolate for the first time I had to agree with him. From that time on we received Burdick chocolates every week fresh from Walpole, New Hampshire.

When Larry Burdick approached me in the summer of 2002 to become the head chocolatier of his company I felt honored and excited. In addition, my son was just three months old and a move to the country from the big city seemed like a good idea.

Red Velvet Cake

I got all excited when I saw beet powder at Kalustyan’s. My mind was buzzing, I was doing cartwheels (in my imagination)… I was going to make a red velvet cake I could eat (I’m allergic to artificial food coloring). Yipee!

Uh no, with some quick research, I found this article, here’s an exert:

“Food purists seeking to replicate the color, flavor and cooking method of a traditional red velvet cake by merely substituting natural food coloring for artificial colors will run into a series of obstacles. These occur because natural food dyes and pigments, like the pigment in beet powder, are sensitive to both heat and pH and change color when combined with baking soda or baking powder.”

Bummer…Mega Bummer!

Chocolate Oatmeal Sandwich Cookie 2

I had Chocolate Cream Cheese Frosting left-over from the Drunken Cupcakes and I couldn’t just let it go to waste. Instead of more cupcakes, I decided on cookies. (Most frosting are great as a cookie filling too.) These Chocolate Oatmeal Sandwich Cookies are not sophisticated; they’re more the kind kids love to eat and smear all over themselves. They are very chocolaty and somewhat chewy and some said they were like brownies.

Banana Birthday Cake with Cream Cheese Frosting

It’s my friend Monica’s birthday and of course I made a cake. I went through the massive list of recipes I have bookmarked and decided on a banana cake. I made a few changes: I omitted the nuts (Monica doesn’t like nuts), opted for a cream cheese frosting, and threw in some chocolate shavings for decoration.

Raspberry Swirl Brownies

A little less than a year ago, I left my last office job (ever, I hope). I haven’t really kept in touch with my old co-workers, but oddly, I am still good friends with the office that was down the hall. The small boutique office of Signature Bank was just the coolest little group that I really enjoyed eating lunch with almost daily. I went back to visit them yesterday, had lunch with Anthony, but of course I had to bring them something. Brownies are one of those easy to transport things that you should keep in your repertoire. These are just a little extra special because they’ve got a raspberry swirl.
