Calabaza and Butternut Squash Soup

I’m extremely proud to serve up this soup as the first recipe of 2011. It’s actually a soup that I made for Thanksgiving, when I decided to work with Calabaza pumpkin for the first time. Being unfamiliar with this pumpkin, though it is not so far off from sugar pumpkins, I didn’t expect to get a winning recipe on the first try. I made the soup intending for it to be a work in progress.

When I served the soup, it got such rave reviews, I quickly tried to jot down notes for what I put in. Luckily, the steps are simple and the soup was easily re-created. I’m so excited to tell you about my Cloud Topped Pumpkin Loaf. I think I may have come up with a totally new dessert! But I guess I have to admit that this all happened by accident. It’s all because I completely messed up the idea I had, failed horribly, total embarrassment to bakers. I hope none of my old pastry instructors read this blog.

Butternut Squash Bread

This Butternut Squash Bread is an adaptation of my favorite Pumpkin Bread recipe. The flavor of butternut squash is more mild, so it works for those (like Lon) who don’t like pumpkin but I think I like the pumpkin version more. Still, this is an easy and light bread, making a good accompaniment to any breakfast.

Moroccan Spiced Pumpkin Seeds

If you are buying and using pumpkins, you better not be throwing out the seeds. That’s perfectly good healthy food, and easy to make. I’m a little obsessed with Moroccan Spices, but I couldn’t help using them to roast some pumpkin seeds. It seems like such a natural combination.

Lean Lamb Roast over Butternut Squash and Parnsips

Fresh Direct had lamb top round for sale and I was happy to see that it came in a 1 1/2 pound size, which is manageable. I decided on a simple preparation that would help me utilize the butternut squash and parsnip, I just got from the farmer’s market. What stands out for me is that this cut of lamb is so lean. The ingredients give the feel of fall, yet it’s very light and perfect for this very warm fall we’re having.

Pequin Pepper Sauce

Wandering through the farmer’s market yesterday, Jessica and I were discussing whether or not grapes were in the berry family. The answer is yes. If you didn’t already know Jessica loves berries. Then, as if the universe was calling to us a moment later we found ourselves in front of a beautiful stand of chili peppers (one of MY favorite types of berries). They had a huge selection of Pennsylvania-grown chilis, including some Pequins — yum. We bought five and home we went for me to start cooking.

Moroccan Spiced Pork Chops with Pluot Sauce

This is an impressive main course to serve to guests (ours were Angie and Scott). The pretty pink sauce is fruity and tangy, a perfect balance for the spicy pork. What’s even better about this recipe is that most of the work can be done ahead of time.

Moroccan Spiced Meatloaf

Inspired by the nicely spiced lamb meatballs at Alta, I decided to make Moroccan Spiced Meatloaf. Lon happens to love meatloaf and the last time I made it, he raved. I love when he loves my food so I thought this would be a good shot and I think this one beat the last one!
